I thought it would be okay to eat 4 cowboy cookies for breakfast. I thought the oatmeal and raisons in them would be healthy!! Jen wanted the recipe, so just in case anyone else wants to try to make our favorites...
Cowboy Cookies
Makes 6 dozen (can freeze some of the batter to bake up later!!)
Nonstick cooking spray
1 1/2 cups flour
1 tsp baking soda
½ tsp salt
1 cup (2 sticks) unsalted butter, room temp
¾ cup dark brown sugar
¾ cup sugar
2 large eggs
1 tsp hot water
1 tsp vanilla
2 cups old fashioned rolled oats
1 cup raisons (or other dried fruit: Jen)
1 package (12 oz) chocolate chips
Heat oven to 375 and coat 2 baking sheets with spray
In a medium bowl, whisk together the flour, baking soda, and salt
In the bowl of an electric mixer, beat the butter and sugars on medium speed for 3 minutes, until light and fluffy. Add eggs, one at a time, and beat after each. Beat in water and vanilla.
With mixer on low speed, add the flour mixture, oats, raisins, and chocolate chips and mix well.
Drop by the TBSP full an inch apart onto the baking sheets. Bake about 10 min, until lightly golden. Cool on sheets for a few minutes, then transfer to wire rack. Store airtight 4-5 days.

I.Can't.Wait.To.Make.These!! (does that remind you of someone's blog?). I'm afraid to make them, though, cause I know I'll end up eating them all!
